Whole wheat is one of the most naturally nutritious foods you can eat, packed with fiber, vitamins, minerals, and healthy oils. Most of these nutrients are found in the three parts of the wheat berry—the bran, germ, and endosperm—which are meant to be milled and eaten together. But in order to mass-produce flour and make it shelf-stable for long storage and shipping, commercial processors remove the bran and germ entirely. This extends shelf life but strips away the very elements that make whole wheat a true “power food,” then attempts to compensate by adding back synthetic enrichment. We mill our flour fresh to order, keeping all parts of the grain intact so you get real nutrition, real flavor, and real freshness the way nature intended.
